It's time to get in the kitchen with Office of Development's own Carmen Marmo-Savinetti, college relations officer, as we launch our "Cooking with Carmen" series during Homecoming 2020.
Follow along with Carmen as she demonstates how to make an hearty Pasta e Fagioli, or grab a glass of vino and catch up with fellow alumni. Guest appearances to be announced.
Ingredients Needed:
- 1 (1-pound) bag 16 Bean Soup Mix or a variety of canned beans
- 2 tables good olive oil, plus extra for serving
- 6 ounces pancetta, 1/4 inch diced
- 1 large onion, chopped
- 1 tablespoon minced garlic (3 cloves)
- 1/2 tablespoon crushed red pepper flakes
- 1 (28 ounce) can crushed tomatoes
- 1 cup dry red wine
- 4 to 6 cups good chicken stock
- Kosher salt and ground black paper
- 1 cup miniature pasta, such as ditalini or tubettini
- 1/2 cup parmesan cheese, plus extra for serving
- 1 tablespoon good red wine vinegar
- fresh basil leaves for serving
If following along with Carmen during the Zoom:
If using the bean mix and not canned beans, you will need to place the beans in a large bowl, add cold water to cover by 2 inches, and refrigerate overnight. The next day, drain the beans, rinse under cold running water, and draing again. Then place the beans in a large pot with 8 cups of cold water. Bring to a boil, lower the heat, and simmer for 1 hour, stirring occasionally and skimming off any foam that rises to the top.
